Spiced Christmas Cupcakes

Sprinkles from Fancy Sprinkles



  • 240g self-raising flour
  • 250g caster sugar
  • ½ teaspoon bicarbonate soda
  • 1½ teaspoons ground cinnamon
  • 1½ teaspoons ground ginger
  • ¼ teaspoon ground cloves
  • 270g unsalted butter, softened
  • 4 large eggs
  • 3 tablespoons whole milk
  • 1 tablespoon golden syrup
  • Regular cupcake cases


  • 300g unsalted butter, softened
  • 540g icing sugar
  • 4 tablespoons brandy (optional – can replace with whole milk)


  • Preheat the oven to 170°C
  • Sift the dry cupcake ingredients and ¾ of a tablespoon of fine salt into a large bowl
  • Add the butter and eggs and beat for 60 seconds with an electric mixer
  • Pour in the milk and golden syrup, then whisk for 20 seconds or until well combined
  • Bake for 20 minutes, or until they spring back when touched
  • To make the icing, beat the butter with an electric mixer for 4 to 5 minutes or until pale or smooth
  • Sift the icing sugar into a large bowl and then add to the butter in two stages, beating well between each stage
  • Pour in the brandy (or milk) and beat for a further 5 minutes or until well combined

Zucchini Slice


  • 1 large zucchini, grated
  • 2 rashers bacon, finely chopped
  • 1 small red onion, finely chopped
  • 1 cup grated cheese
  • ½ cup self-raising flour, sifted
  • 2 tablespoons olive oil
  • 3 eggs


  • Preheat oven to 180°C
  • Butter and line a 20cm square or slice tin
  • Combine zucchini, bacon, onion and cheese in a bowl
  • In a separate bowl, add flour, oil and eggs, mix well
  • Combine with zucchini mixture
  • Pour into the tin and bake for 30-35 minutes until set and starting to colour
  • Allow to cool before cutting


Rocky Road


  • 600g dairy milk chocolate
  • 1 packet Natural Confectionary Company Berry Bliss lollies
  • 1 cup rice cereal
  • 1 cup mini marshmallows
  • 1 handfull pistachios


  • Melt chocolate
  • Mix in all your ingredients
  • Refrigerate


Coal Rice Krispie Treats

  • 3 cups mini marshmallows or 30 large marshmallows
  • 1½ tablespoons butter
  • 4 cups rice cereal
  • 1½ cups crushed Oreo cookies
  • 4 – 10 drops black gel food colouring


  • In a large microwave-safe mixing bowl, heat marshmallows and butter for 60-90 seconds, until the butter and marshmallow are melted
  • Stir marshmallows and food colouring
  • Add rice cereal and crushed Oreo cookies
  • Let them cool and then use a tablespoon to scoop coal-shaped balls
